Christmas gift ideas for Baby doll.

Wanting to buy my baby doll a kitchen play area for Christmas, I stumbled upon a gold mine of DIY kitchens! What an amazing idea, right? So here is my inspiration for my Christmas surprise project!!!

So time to keep an eye out on Craigslist, because I have to find some old piece of furniture to make into a play kitchen. I'm so excited, I can hardly stand it!

Fall?

Here in the Pacific NW we don't really see a "hot" summer. We usually have 1, maybe 2 weeks of "unbearable" heat, says the natives. Other then that it's mild to say the least. Around this time, fall is usually in full swing, with it's cold cloudy days. Today however, was a beautiful 75 degree day. Just enough warmth for some shorts and outside projects. The dresser I was working on this summer is still being worked on. It's a pretty big project. One I'm not sure will ever be completed, due to the condition and repair it needs. I'm not sure it's worth the effort. But it fits in my storage, so there it will stay for now. Today I worked on a new project. A shelf. It's for a friend, a friend I've never met. She lives in Japan with her husband and 2 beautiful girls. They are there because that is where the army sent them. Their arrival back to the states after almost 2 years (not certain of the time frame) will be in November. She is a dear friend of my soon to be husband, and we plan on welcoming them back with lots of love. With that said, I'm starting in on this project with little direction, but so many ideas. I debated on the vintage carousel theme for my little ones room, but went with purples and greens instead. So I really have ideas along those lines, since she is thinking about horses of all sorts for her girls room. But I'm nervous to do a retro, antiqued piece without knowing what exactly her plans are. So I'm waiting... I did however, build the piece myself :D I'm very proud! Hehe. This is the start, no final pictures until I'm sure she won't see this.


It's a simple shelf, but I wouldn't take on a bigger project that I wasn't sure I could handle. I only have a little over a month to get it right ;)



It is painted now, but only the first coat of a color I'm not sure will stay... so you'll have more to see later!

Oh and dinner, was a homemade chili and baked potatoes. If you don't make your baked potatoes sliced open and rolled in butter/olive oil and then rolled in sea salt and cracked pepper... you don't know what you're missing out on. Thank you North Carolina for showing me how it's done!


Just slice with a knife (not all the way through) in a star pattern, roll in butter/oil mix, then salt/pepper mix, and bake in a baking dish for 90 minutes, and... tada! The best baked potato you'll ever eat :) Or so says this pregnant girl.

Chili came out fantastic as always. I'll get around to typing out the recipe for anyone who wants it and doesn't have it some other day... I'm sure there will be chili a plenty this winter.

Comfort.

Who doesn't find comfort in a hot bowl of homemade mac and cheese?

My mom recently sent me a GF recipe for this and it couldn't have come at a better time then fall :)
And it's quite simple! Could it get any better? Oh yeah, it did with jalapeno salsa (which is my craving to go on anything and everything with even the slightest bit of cheese in it).

 


Recipe:
8 oz. GF (non GF can be used instead) elbow macaroni
8 oz chedder cheese

Sauce:
3/4 cups milk
2 eggs
1 tblsp. corn or potato starch
3/4 tsp salt
4 oz  Pepper Jack (you can sub monterey jack or cheddar)

Topping:
2oz. chedder cheese

Preheat oven to 350 degrees. Cook pasta according to package directions. Rinse and drain well. Set Aside.

Shred cheeses, keeping them apart.
In a microwave safe bowl combine sauce ingredients. Microwave and stir in 20 second intervals until the cheese has melted and sauce thickens slightly. The frequent stirring is necessary to avoid the scrambled egg effect.
Combine pasta, sauce and 8 ounces of shredded cheese. Mix well. Place in an oven safe casserole dish. Cover and bake for 30 minutes. Uncover and sprinkle with the remaining cheese. Bake 15 to 25 more minutes, until top begins to brown.


Huge thanks to my mom! It was wonderful and loved by all, even my brother in law who is a mac and cheese connoisseur, in fact both mac and cheese recipes I've posted have been loved by him. I must be good at this ;)

Basics.

So I'm the 'meatless super mom', I know. Yet I post meat recipes all the time. Ha. I've always been about pleasing other people. I hardly ever do anything for myself which is the only way I can accomplish the 'super mom' part. Or at least that is my feelings on that. So, this is why I make meat. For this particular post, I will be eating the broth. I bought an organic free range chicken, which I claim I will eat since the chicken hasn't been treated inhumanely, but I just can't do it. However, tomorrow night or the one following, I will enjoy the juices :)



Roasted Chicken

4.5 pound chicken, rinsed and gutted
salt and pepper

1/2 stick butter, melted
1 tsp lemon zest
1 tsp thyme
1 tsp rosemary

Salt and pepper the chicken. Mix the butter and herbs in a bowl, then rub all over the chicken. Let the chicken set for 2 hours.





Preheat the oven to 425.
Cook for 1 1/2 hours. Rule of thumb, if you need to get a different size chicken, is 20 mins per pound.

After 1 hour, flip the bird. Wait 20 mins and flip again for the last 10 minutes, then take out the bird and let it cool.


I made quinoa as well... and if you've never had it, I strongly recommend trying it out. It's one of my favorites.
Cooks the same as rice, 2-1 ratio, and best made with broth.



If you plan on making a stock, remove all chicken from the bones. In a stock pot, throw in the bones, skin, left over pieces and drippings from the pan. Add 4 bay leaves, 1 onion, 4 cloves of garlic, and tsp of mustard seeds. Fill with water until covered and a little extra.

Bring to a boil, then simmer for 2+ hours. Taste test along the way.

Pho! Perfect rainy day dinner.


Unfortunately, I don't have a recipe for this. I really just add whatever is in reach. Chicken broth, cilantro, garlic chile sauce, lime, soy sauce, fish sauce, pepper, green onions... is the broth part of this particular soup. Add rice noodles, bean sprouts, basil, more cilantro, more green onions, tofu, and you're set!

It's a winter must in this house... and we squeeze it in on any chilly days we can during other seasons :)

A sweet farewell to my gluten filled diet...

So I went to have my list of blood tests done, one being for Celiac's. Which came back negative. But did you know that the blood test can be pretty inaccurate? Why didn't I just listen to the doctor? I have no idea if I have it or not, but I have to be gluten free for the rest of this pregnancy to determine that. I wanted the blood test, because I figured if it said yes, I would be 10 times more likely to follow through with the diet. Then I thought about it... why would I not do the diet if it helped to cure my nausea and iron deficiency? So this menu was designed to give one last farewell to my love, gluten.



Squash & Cheese filled homemade raviolis with Maple Sage Cream Sauce.


Filling:
  • 2 cups butternut squash
  • 1 cup summer squash
  • 1 clove garlic
  • 1 tablespoon olive oil
  • salt and pepper
  • 1/4 cup caramelized onions (or quickly saute some onions until soft)
  • 1 cup parmesan cheese
Sauce:
  • 1 tablespoon butter
  • 1 clove garlic
  • 1 tablespoon flour
  • 2 tablespoons Nuefchatel cheese
  • 1/2 cup milk I used skim
  • 1 tablespoon fresh sage minced
  • 1 tablespoon maple syrup
  • salt and pepper to taste


So I started out with chopping up the butternut and summer squash to be baked until tender.

Pre-heat oven to 375˚.  Peel and cube the butternut squash, dice yellow squash, and roughly chop the garlic.  Toss squash mixture in olive oil and spread out on a sheet tray covered in tin foil.  Sprinkle a pinch of salt and pepper over and bake for 25-30 minutes until squash in tender.  Place squash in food processor and let run until squash is pureed.  Stir in parmesan cheese and onions, set aside.

While squash is roasted, make one recipe of whole wheat past dough. Once pasta is ready to go, divide in half and roll out each on a floured surface into a rectangles, 1/8" thick.  Spoon 1 Tablespoon of squash mixture into rows on one piece of the pasta.  Make sure as you create your rows you are leaving enough room to press the edges together.  Once you have the first side ready, lay the second piece of pasta over the filling.  press down lightly around each ravioli and then cut out squares. I do not own a ravioli cutter, but mine turned out fine with a knife and pressing with my fingers.


  • In a large pot, bring water to a boil.
  • While waiting for water to boil, begin to make sauce.  Melt butter in a small sauce pan and add in garlic.  Saute until garlic becomes soft and fragrant.  Whisk in cheese, sage, and flour until mixture is smooth.  Continue to cook for 1-2 minutes.  Pour milk into the pan while whisking and continue to whisk until sauce is smooth.  Add in maple syrup and continue to whisk until sauce begins to think.  Taste, add salt and pepper, then remove from heat.
  • Once water in the large pot is boiling, add in ravioli, making sure to not crowd the pan.  Let boil until ravioli float to the top.  Remove with a slotted spoon, plate, and drizzle sauce on top.
 Finished Product: A++!!

Balsamic and Herb Marinated Pork Tenderloin:

1/4 cup balsamic vinegar
1/4 cup olive oil
2 tsp Dijon mustard
1 TBSP minced garlic
1 TBSP fresh rosemary, chopped
1 TBSP fresh thyme, chopped
1 tsp fresh sage, chopped
1 tsp kosher salt
1/2 tsp black pepper
2 1/2 lb. pork tenderloin (this was two separate pieces for me, each weighing about 1 1/4 pound. I cooked them both but served only one and saved the other for another meal)




Green Beans

Combine all marinade ingredients in a sealable gallon baggie. Add tenderloins. Press air out of baggie and seal. Refrigerate for at least 4 hours.

Preheat oven to 400 degrees.

Remove pork tenderloins from marinade and discard marinade. Season tenderloins with salt and pepper. In a LARGE (12 inch) oven-proof skillet, heat 1/4 cup canola oil. When oil is hot, add the tenderloins and sear on all sides, about 1-2 minutes per side. Place skillet in oven and finish cooking tenderloins, about 15-20 minutes or until internal temperature reaches 140 degrees. Remove pan from oven (BE CAREFUL, the handle will be screaming hot) Remove tenderloins to cutting board and cover tightly with aluminum foil.

Increase oven heat to 450 degrees.

Place green beans in same skillet. Toss to coat in the oil remaining in the skillet and season well with salt and pepper. Return the skillet to the oven and let vegetables roast for and additional 15-20 minutes. Remove skillet from oven and transfer veggies to a serving platter. Slice tenderloins into 1 1/2 inch slices and add to serving platter.

 I had many compliments on this, but as usual, I can't personally say it was delicious.

And then there was dessert:

Cinnamon Bread:

1 Tablespoon rapid rise yeast
3 1/2 cups flour
1 1/4 cups warm water (110 degrees)
2 Tablespoons canola or vegetable oil
2 Tablespoons honey
3/4 teaspoon salt
2 Tablespoons melted butter
1 cup sugar
2 Tablespoons cinnamon
1/2 teaspoon fresh nutmeg


In the bowl of the mixer with the dough hook attachment, mix together the yeast and flour. Pour in the water, oil, honey, and salt.  I put it all together in a measuring cup and pour it in. Mix the dough on low speed for about 10 minutes. The dough will be smooth and elastic.  If your dough is really sticky, you can add up to one half cup of additional flour. Turn the dough out onto a floured surface and knead by hand a few times.  Put the dough in a lightly oiled dough.  Cover with plastic wrap. Put the dough in a warm place and let double in size.  Mine took about an hour.

Flour your board and roll out your dough roughly the width of your loaf pan. Using a pastry brush, brush the dough with the melted butter.  In a bowl, mix together the cinnamon and sugar. Sprinkle the mixture on the buttered dough. Roll up the dough and pinch the ends closed. Put the dough in a lightly buttered loaf pan.  I butter it when I am buttering the dough. Cover the loaf with a towel and let rise for 30 minutes or until it looks like this.

Bake in a preheated 350 degree oven for 25-30 minutes or until golden brown. Turn the bread out of the pan, and let cool.  If you can let it cool before you cut it, amazing. I, however, cut right into it. Resisting was far too painful.


To say the least, my farewell was outrageously delicious :D!

Bridal shower by me!

So, I apologize for not keeping up. Finally found out why I've been SO tired and not feeling well. I'M PREGNANT! Woot! Super excited, it didn't take long at all. I want to show you, I actually lost a bunch of weight prior to the pregnancy :)



So today was the bridal shower for my love, the soon to be Mrs. Collins :D! I did all the decorating and cooking, minus some amazing cookies made by the lovely miss Heather. Here are pictures...

Fajitas!


I'll keep this short and sweet... Non stick skillet, plus shrimp, chicken (for the meat eaters), some different colored bell peppers and onions, your set! Fajita feast, you will have! Skip the flour tortillas, head straight for the corn ones. Why would you want to eat enriched flour? You do know what that is right? Well, hopefully you do, and if not... well look it up. It's an important part of being healthy. Just sayin'.

Rather large blog, due to: lack of a computer.

Errr... Viruses. No matter how careful you are, they seem to find their way in anyways. I'm ever so thankful to my computer nerd of a boyfriend for a fast fix! This blog my seem a bit lengthy, but I'm trying to get you caught up. Working full time, means not much time for projects, but I'm trying. No new pictures that I'm satisfied with, but the dresser is slowly coming along. Still working with paint thinner and a ton of sandpaper... I think I can, I think I can... Ha. I started trying out some recipes for an upcoming event... so I wanted to share a little on those.

Spicy ranch deviled eggs, definitely.

Next on the list, zucchini pepper jack muffins... unfortunately, they were gross, but made for a pretty picture:

I'm a fan of both, zucchini and pepper jack, love them. But these were blan, and icky = /

But we had the eggs, hummus, salsa, and cinnamon muffins (from a box mix, lack of time=no recipe made muffins). Good snacking.


I made 2 different flavored hummus. One side was with salsa mixed in, the other was with green olives. I love love love hummus, so I liked them equally. If you have garbanzo beans (chickpeas), some yogurt, milk, salt, pepper, and garlic, you've got your self the perfect start. Throw it in the blender to the texture of your liking, and you're done. Easy peasy.

Also I'd like to share a couple cool finds from this weekend. Yard sales and antique stores are my favorite... and I really scored this weekend...



At the end of a long day, of sitting out in the sun hoping people will buy your crap, people will give you some really good deals. All of this was $20. Plus there is a few things not pictured. But just the wooden high chair and changing table for dolls, would go for $80 easily brand new, and these are pretty much brand new :D!  So it was a great deal!

Then there was a camera... I couldn't resist.


I love old cameras. If I could find ones I like more often, I'd probably collect them... But with my suitcase collection, I don't know if I should start another... maybe. I'm just crazy in love with it.

Stir Fry/Chow Meinish dinner and Fresh Mango Cupcakes to follow.

This is a dish I make often. If you have had many dinners at my place, you've surely tried this dish. It's a favorite.

I grab a jar ( I save every glass jar I come across, it's a wonderful idea if you buy bulk health foods) and I splash some soysauce, garlic chile sauce, fish sauce, cilantro, lime and ginger. Never the same amounts, always delicious. Then I cook rice noodles, drain, fry, add veggies, tofu and then sauce. Then we om nom nom it!

Today with my "kids" (the ones I nanny for) we made vegan mango cupcakes. And if you like a less sweet version of cupcakes... you're gonna LOVE these!

The once a week "manly" meal...

I, obviously, stuck with a protein bar for dinner... But once a week, at least, a boy needs some meat and grease. Or so says the boyfriend. I'm not against it, just hate cooking the meat. The sacrifices I make, are great for love! Ha. Again, sorry for the terrible picture. Hopefully my camera will cooperate tomorrow after a new set of batteries. No new update for the dresser, I'm working on it, just don't want to take and send pictures from my phone. More tomorrow.

Comfort food on a cold summer day.

I wanted to make the boys (the boyfriend and his brother) a warm yummy lunch today. I do this from time to time and I thought I'd be doing it more often but, to my great surprise, I saw the taco truck has returned after a long vacation. Funny that I decided on Mexican Macaroni today, huh? Please excuse the terrible picture quality, as my camera decided to not work this morning.

Nothing says comfort like some homemade mac and cheese!

2 TBS Olive Oil
1/2 CUP Diced Shallots
3-4 Pickled Jalapenos, minced
1/2 TSP Mexican Oregano
1/8 to 1/4 TSP Turbinado
8 TBS Butter
4 CUPS Whole Milk
2 CUPS Ditalini
1 1/3 CUP Grated Cheddar Cheese
1 CUP Grated Mild Jack Cheese
3 OUNCES Goat Cheese

In a large ovenproof skillet, heat olive oil. Add shallots and jalapenos. After 2 minutes add oregano, lightly sprinkle turbinado over shallots, and stir for 3 minutes. Once shallots are crystallized, turn heat down low and add the stick of butter, chopping and stirring it in.

After minutes add the milk and stir. Add macaroni, and turn the heat back up to medium or med low. Be careful not to let the milk curdle. After another minute sprinkle 1 cup of cheddar cheese then the jack. Stir gently and add goat cheese. Continue stirring gently trying to prevent cheese from clumping. Increase the heat as you see fit. Heat and gently stir for 30 minutes.

Preheat oven to 350.

Remove the skillet from the heat and sprinkle the rest of the cheddar on top. Put skillet in the oven for 10 minutes, then broil for 3-4 minutes until the cheddar is lightly browned, forming a crust. Serve immediately.



This picture does not do it justice... I'm sad my camera was being dumb. It was delicious, I only tried a small bite, the rest was devoured by the boys :)! And I have to throw in a HUGE thanks to my mother in law for my favorite Calphalon skillet, it has to be the best think I've ever cooked with. It was given to me for my birthday in March, and I couldn't even count the number of times it's been used since then. And the fact that it can go into the oven, 2 thumbs up. I'm still getting use to having nice pans (I got some from my wonderful boyfriend this past Christmas, also) but I'll never go back to cheap stuff! It's THAT amazing. Okay, off to do some work on my dresser since this is my last day off. More blogging to follow...

Yum, fish!

Dinner tonight: Hot and Sweet Grilled Tilapia and Quinoa

Thank you Padma Lakshmi for this sweet fish recipe!

4 Tilapia Fillets
Olive Oil
Salt
Ground Pepper
2 TBS Fresh Squeezed Lime Juice
2 TSP Sugar
1 TSP Minced Ginger
1 TSP Minced Fresh Green Chile

Brush grill with olive oil and heat until very hot. Brush the fish with oil, salt and pepper them.

Combine lime juice, sugar, ginger and chile with a dash of salt in a small bowl.

Place fish on the grill, for about 2 minutes on each side, or until white and fluffy.
Take off the grill and pour the sauce on top.

All done!

As for the quinoa, 2:1 ratio, like rice. I use broth instead of water. Bring to a boil, turn down heat, let cook until water or broth is absorbed. Add feta, enjoy.

Tonight dinner was wonderful. Completely satisfied.

It burns too much.



I attempted to finish removing as much paint as possible.  Unfortunately, I ran out of gloves. Paint thinner is not nice to my skin either, it burned like h-e-double hockey sticks. All that goop is the paint, if I could think of something to do with it, I totally would. Nothing comes to mind. I got quite a bit done between chores and I'm happy with my progress. So I'm done for the day, but I will make a trip to the hardware store on my way home from the gym for more gloves. I have a scheduled training today with my very own personal trainer, which I'm sure is going to kick my butt! = /

If you don't like it, don't eat it... or read it.

Taco Sunday.

 Yes, we still eat tacos... minus the ground beef. The thought of cooking ground beef, makes me want to vomit. Never thought that would happen. Not eating meat, for me, is a health thing. It's not that I don't believe in killing for dinner, I just like trying to be skinny. It's truly been a crazy change in my life... from the way I eat to the way I feel about meat. But enough jibber jabber... lets talk about these tacos!


If you hate the thought of eating tofu, you're not alone. I would've agreed, even when turning into a pescetarian. Then I found that it could be flavored just like anything else. Tonight I mixed the tofu with taco seasonings, worcestershire sauce, hot sauce, and cilantro. Yum! Then topped with a little cheese, guacamole and more cilantro. Add corn and a Corona, and you've got yourself a fantastic taco dinner, vegetarian style ;)

It was a hit... even with my brother, who is staying with us. He is trying stuff he's never eaten in his life! I'm happy he is enjoying it, for the most part, anyway.

Struggles.

The laziness of this dressers previous owner, makes my life all the more difficult.

Yesterday, I spent a good amount of time and sweat, to get just this 1 corner done! Last year's project dresser, I sanded by hand and almost finished all the sanding in one day. Bleh. So I went back to the hardware store today... and I purchased paint thinner, more sand paper, scraper, and gloves. Ahhh... life got a little tiny bit easier. The top is mostly finished. Here's my progress as of tonight:


Still debating between staining and painting. I absolutely LOVE to paint, but I'm thinking about trying something different. Plenty of work still to be done before making any final decisions.
